Quick and Easy Basil-Arugula-Tomato Pasta

This is a super fast and super yummy vegetarian dish, drop the honey if you want it vegan 🙂


Servings: 3

Please take the measurements with a pinch of salt (sooorry, couldn’t resist) since I kind of improvised along the way!


  • 250 g (whole grain) spaghetti
  • 7 dried tomatoes
  • 2 fresh tomatoes
  • A handful of arugula
  • A handful of fresh basil
  • 50 g pine nuts
  • 1 spring onion
  • 1 shallot
  • White wine or apple juice to deglaze
  • Honey
  • Salt
  • Pepper
  • Olive oil
  • Parmesan (optional)
  • Lemon juice


  1. Bring water to boil, add salt and pasta, and let boil while you’re doing everything else.
  2. Cut shallots in fine dices, spring onions in rings, fresh tomatoes in dices and dried tomatoes in stripes
  3. Roast the pine nuts in a pan without fat and set aside
  4. Use the same pan to fry the rest: fry shallots on low to medium heat until golden, deglaze
  5. Add pasta with a little bit of the pasta water
  6. Fry shortly before adding the dried tomatoes and spring onions
  7. Season with salt, pepper, a dash of honey and lemon juice
  8. In the end, add the basil, arugula, and fresh tomatoes – toss and serve
  9. For serving, add the roasted pine nuts, drizzle with olive oil, and add some freshly grated parmesan
